Our Wine Philosophy
We believe there is a wine for every occasion or for no occasion at all – just the simple pleasure of indulging in the wine itself. Whether you enjoy a standard chardonnay or if you insist on bubbles for every event, or you want to experiment with new wines and new flavours, or even if you know that you want that 2001 Antinori Tignanello Super Tuscan, our wine list will comfortably accommodate and inspire you.
The Ti Kave
Because the Caribbean is such a rich cultural melting pot with strong European origins, Ti Kaye Resort has made sure to infuse wine into the core of the culinary ethos of the resort. Wine has always played a key role at Ti Kaye, and in 2010 we took it to a whole new level with Kai Manje’s ‘Ti Kave’ – an underground wine cave built to house a collection of more than 3000 bottles of premium vintages from across the globe. Driven by owner Nick Pinnock’s personal passion for wine, the Ti Kave was transformed from an old water reservoir into a medieval stoneclad room, and is now home to an award-winning selection of wine, including many of Nick’s favourite bottles.
The World of Wine
Under the supervision of Sommelier Cleus Charles and wine waiter Dwight Berthier, Kai Manje’s wine list has evolved over the years to become a Wine Spectator ‘Award of Excellence’-winning wine list of 600+ Bins.
For our passionate wine team, compiling an award-winning wine list was a challenging and exciting adventure. They reached out to the furthest regions of globe in an attempt to bring a true reflection of those vineyards and wine houses to Ti Kaye Resort. Our wine list offers an expansive selection of classic old world wines from France, Germany, Austria, Hungry, Italy, Spain, Israel, Lebanon and new world from the USA, New Zealand, Australia, South Africa, Chile and Argentina.
Wines by the Glass
Cleus and Dwight are passionate about our guests having variety to choose from, so they have compiled a list of 32 wines by the glass from our 600+Bin Wine list. Guests are able to play and experiment with different styles while pairing these wines with many of the dishes from our menus, including Cassereep-infused Onion Soup, Sugar Cane Grilled shrimp, Coffee Rubbed Filet Mignon, Plantain-Crusted Mahi Mahi, and Coconut Crème Brule and Whipped Brie with a Port Wine Syrup.
Piper Heidsieck Champagne introduces our first wine by the glass, followed by a sparking Spanish you can travel down the wine list to a crispy white sauvignon blanc from New Zealand, an oaky Californian chardonnay, and an Italian pinot grigio.
With rosé acknowledged to be making a come back and being the perfect quaffable beach wine, we offer three distinctly different rosés from around the globe, including a pinot noir from California, Côtes de Provence from France, and a malbec from Argentina.
Dessert wines are a favourite; with their silky texture floral ice sugar aromas we offer a Sauternes Cru Classé and a Moscato to compliment our large selection of desserts and cheeses.
As we are in the tropics we serve our reds a slightly more chilled temperature to our European and American counterparts.
Champagne & Sparkling Wine
Vacations are often a celebration of life, be it a honeymoon, birthday, or many happy years together, nothing really marks the occasion quite like Champagne. Ti Kaye offers more than 30 classic champagnes and sparkling wines to suite your palate, with extravagant names like Louis Roederer Cristal, Armand de Brignac ‘Ace of Spades,’ Laurent-Perrier Brut, Grand Siècle, and Maison Perrier-Jouët ‘Le Belle,’ just to name a few.
Ti Kave also carries all-time favourites such as Verve Clicquot Brut, NV Bollinger Special Cuvée Brut, Taittinger Brut Réserve, and Moët & Chandon Rosé Impérial.
We also believe there is always room on the beach or by the pool for the bottles of bubbly, so don’t be shy if you – like Madam Lily Bollinger – fancy a chilled bottle of Italian Prosecco or Spanish Cava. It’s just a perfect complement to our warm weather.
With local ingredients such as coconut, bananas, pineapple, mango and coco (chocolate) playing a key role in the cuisine and culture of Saint Lucia, pulling a strong selection of dessert wines in to list, over 15, was important to the wine team. This has allowed dishes such Tropical Fruit Crepe with a Vanilla Bean Crème Anglaise to be paired with Moscato and Coconut Coco Mousse, accompanied by a ruby port.
